Sunday banana pancakes! A perfect breakfast before a little expedition to the hills.
Can be gluten free or gluten full, dairy free or not.
First:
mix 1/2 c oatmeal with 1/2 hot water and let sit
Dry:
1 c flour (spelt, brown rice, or wheat, if you're into that)
3/4 teaspoon (t) baking powder
3/4 t baking soda
1 t cinnamon
1/2 t sea salt
mix together well
Wet:
1 egg
1/2 c yogurt, almond milk, mashed banana, or coconut milk
2 t vanilla
1 tablespoon (T) olive or coconut oil
1 T maple syrup
mix together and add the oatmeal mixture
Mix wet & dry & add 1 banana, sliced
Cook on a lightly oiled grill or pan at medium or low heat. Remember: the first pancake is always the worst pancake.
Top with maple syrup, fruit, yogurt, cream, and preserves. Eat, then go hiking.
